(Apple Chutney with Caramelized Onion)

Hello my boozy friends! Welcome to another installment of the world’s greatest cheese blog! Today, I give you the recipe of my super scrummy (I’ve been watching The Great British Baking Show nonstop) savory/sweet apple chutney. You can skip to the recipe here

This is a super easy recipe that is packed with hella flavor. The caramelized onions add this incredible deep flavor to the apples and just a hint of curry seasoning ties it all together.

So let’s talk making caramelized onions, because there’s some iffy information out there. Caramelized onions comes from the process of cooking onions in some sort of fat (normally butter or oil) slow and low for a long enough amount of time that the sugars in the onion caramelize. Right, it’s all in the name.

I cannot stress this enough, slow and low is the name of the game my friends. If you ever run across a food blog or recipe that tells you to cook your onions for any time LESS than 35 to 45 minutes, write them an angry letter.

So, it does take a little patience and love in order to make the onions for this dish- but oh my word, it’s totally worth it. Plus, learning how to make caramelized onions is just one of those cooking things that you should learn as a way of branching out your flavor profiles for the food you make.

Moving on from that, let’s now talk about curry powder. I’m sure most of you know that curry powder is a mixture a several different spices, and not all curry powders are the same. I’m not really going to get into the minutiae of the different blends because I’m not knowledgeable enough, and it doesn’t really matter for this recipe.

What DOES matter for this recipe is the amount of curry you use. Obviously, everything is up to personal taste- but this dish is already packed full of flavor from the onions. So, you honestly only need a dash of yellow curry powder. The recipe calls for 1½ teaspoons, I wouldn’t use any more than that- possibly slightly less.

Okay! I think that’s all I have as far as tips for properly preparing this topping. As soon as you caramelize your onions, this recipe goes really fast. None of it is difficult, it just takes more time is all. I really hope that you find it as yummy as I do!

Cocktailing 101

Cocktails are those things that anyone can do, but only some people do well. I will be the first to tell you that there are some needlessly complicated cocktail recipes out there that are all pomp and not actually that great to drink.

I’ve been a bartender for almost a decade and one thing I can tell you for certain is that you do not need to set your orange peel on fire for a good Old Fashion. However, you DO need really good bitters (*ahem*), and a nice balance on your sweetness to booziness level.

And that’s the most important lesson that you can learn for not only for cocktails, but for all your culinary endeavors (and, frankly, your whole life): balance. When it comes to drinks, a truly great cocktail allows every ingredient to shine.

Take for example, the margarita. Almost everyone has had one, but most people have only drank terrible ones. A truly good margarita has tequila, triple sec (a good one like Cointreau, or your own homemade), lime juice, and simple syrup. The amount of simple should only be enough to balance the sour of the lime juice. It shouldn’t be cloying or syrupy.

Classic Margarita Recipe

2oz tequila

1oz triple sec

1oz lime juice

1oz simple syrup

You can take this classic recipe and swap out different alcohols and liqueurs and get a nicely balanced drink to serve your guests. Please, for the love that is all that is boozy don’t use premixes. They’re awful and filled with garbage ingredients. My recipes may not be healthy, but at least you can pronounce everything that’s in them.

Or that because it’s all meaningless, you are ultimately solely responsible for creating whatever meaning you wish to experience.
