Bacon Your Pardon (bacon jam) Recipe

I got this recipe from another blog called Dinner with Julie. I really enjoy her recipes and encourage you to check her out

Ingredients

  • 1 wheel of brie

  • 1 lb good-quality bacon (I used a brown sugar bacon that Kroger has in it’s case)

  • 1 small onion, chopped

  • 3-4 garlic cloves, chopped

  • 1/3 cup packed brown sugar

  • 1/2 cup brewed coffee (hot or cold)

  • 3/4 cup of maple bourbon divided (into ¼ cup and ½ cup)

  • 1/4 cup maple syrup

  • 1 Tbsp. balsamic vinegar

  • 1 Tbsp. grainy mustard

Brie Preparation

  1. Preheat oven to 400 degrees F

  2. Cut top rind off of the brie. Be careful not to take off too much of the cheese with it.

  3. Score the cheese. With your knife, make multiple cuts into the cheese going both top to bottom, and side to side. Be careful not to cut into the remaining rind. You want to keep it intact to prevent the cheese of oozing all over the place.

  4. Soak brie . Put the brie in an oven safe dish and pour ½ cup of maple bourbon over the brie. Allow it to soak for at least 15 minutes

  5. Throw it in the oven and allow it to melt completely

Bacon Jam Preparation

  1. Cook your bacon to your desired crispiness.

  2. Remove your bacon from the pot and drain out most BUT NOT ALL the fat from the pot.

  3. Sautee your onions and garlic in the remaining fat until golden brown.

  4. Add your bacon and the rest of your ingredients to the pot

  5. Cook until reduced to a “jam-like” consistency

  6. Put a large dollop of your bacon jam onto your melted wheel of brie and serve!
